What is a kräftskiva (a Swedish crayfish party)?

A kräftskiva is a traditional Swedish crayfish party that takes place in late summer, usually sometime in August or September. The tradition originally became associated with the opening of the Swedish crayfish fishing season, but today it is primarily a much-loved social celebration and a way to make the most of the final weeks of summer.

The centrepiece of the party is, of course, crayfish. They are traditionally served cold, often accompanied by plenty of dill, crusty bread, butter and strong Swedish cheese. The meal is just as much about socialising as it is about the food, with guests gathering around a decorated table to eat, drink, sing and enjoy a long summer evening together.

Paper hats, colourful paper lanterns, candles and crayfish-themed decorations are all characteristic parts of a traditional kräftskiva. The atmosphere is relaxed, playful and wonderfully informal – making a crayfish party an easy celebration to recreate at home. A great location and a lovingly laid table are essential ingredients for a Swedish crayfish party.

When and how is a Swedish crayfish party celebrated?

Swedish crayfish parties are traditionally held in August, although celebrations can continue into late summer and early autumn. The party is usually held outdoors, weather permitting, with guests gathered around a long, beautifully decorated table in the garden, on a terrace or balcony.

The table is often decorated with colourful paper lanterns, candles, flowers and playful crayfish-themed details. Guests may wear traditional paper hats and bibs, while plates are filled with crayfish, dill, bread and cheese.

One of the most distinctive parts of a Swedish crayfish party is the singing. Throughout the meal, guests raise small glasses of snaps and sing snapsvisor – traditional Swedish drinking songs. You don't have to know the Swedish lyrics to join in; the important thing is to sing together and enjoy the occasion.

Decorations: How to create the right atmosphere for your Swedish crayfish party

A successful Swedish crayfish party is about much more than the food. The decorations help create the relaxed, festive atmosphere that makes a kräftskiva so special.

Whether you're hosting your party in the garden, on a balcony or around your dining table, colourful accents and playful details can instantly transform the space. Traditional crayfish parties tend to embrace colour, so don't be afraid to move away from an everyday table setting and have a little fun.

Think colourful paper lanterns, candles, flowers, patterned napkins and tableware in shades of red, blue and white. Natural materials such as linen and wood can help balance the brighter colours and give the table a distinctly Scandinavian feel.

Table decorations for your crayfish party

The table is the centrepiece of every Swedish crayfish party. This is where guests gather to eat, raise a toast and sing together, so it is worth making the table feel welcoming and festive.

A traditional kräftskiva table can be colourful and playful, with decorations that celebrate the late-summer season:

  • Tablecloths and napkins with crayfish or floral and herb motifs provide authentic and playful twist.
  • Kitchen towels not only serve as a decorative element but are also very practical when eating crayfish.
  • Shot glasses, plates and cutlery in red, white or blue complete the picture.
  • Small bowls with dill, lemon slices or maritime details such as shells bring additional accents to the table.
  • Place cards or menu cards in a matching style give the table a personal touch.

Tip: Don't worry about making everything match perfectly. Combine colourful tableware with natural linen, wood and glass for a relaxed Scandinavian look that feels festive without being overly formal.

Paper hats - a must for every Swedish crayfish party

Few things say Swedish crayfish party quite like a colourful paper hat. Paper hats decorated with crayfish, flowers and other playful motifs are a traditional part of kräftskiva and help set the mood from the moment guests sit down.

You can buy ready-made hats or make your own as a fun activity before the party. All you need is some paper, scissors and a little creativity.

Make your own paper hat for the crayfish party

  1. Use a A3 sheet of paper - patterned paper or colourful wrapping paper is particularly suitable.
  2. Fold the sheet in half lengthways.
  3. Fold the two top corners towards the centre to create a triangle.
  4. Fold the bottom edges upwards to create the classic hat shape.
  5. Decorate the hat as you wish - with crab motifs, stickers, name tags or small pompoms.

The finishing touches for your crayfish party

As a Swedish crayfish party often continues into the evening, lighting is an important part of creating the right atmosphere. As the daylight fades, candles, lanterns and paper decorations make the table feel even more inviting.

  • Paper lanterns are a classic element of the Swedish crayfish party.
  • Fairy lights, candles, candle holders and lanterns create a cosy and playful atmosphere.
  • Garlands with crayfish motifs, flags or colourful pennants are easy to hang and are a real eye-catcher.
  • Seat cushions and blankets provide comfort on the balcony or terrace - especially when it gets a little cooler in the evening.

If you're hosting outdoors, don't forget to have a plan for changing weather. A covered terrace, gazebo or nearby indoor space means the party can continue even if the summer has other plans.

How to eat crayfish properly

If you're attending a Swedish crayfish party for the first time, you may be wondering how you're actually supposed to eat the crayfish. Don't worry – eating with your hands is part of the fun!

Crayfish are traditionally served whole and eaten by hand. Here's a simple guide:

  1. Hold the crayfish firmly and twist off the tail.
  2. Crack open the softer underside of the tail and peel away the shell to remove the meat.
  3. Break off the claws and carefully crack them open to get to the meat inside.
  4. Enjoy the tail and claw meat with dill, bread, butter and cheese.

Eating crayfish can be messy, which is why napkins, kitchen towels and even bibs are often part of the traditional table setting. Don't worry about making a mess – it's all part of the experience.

Tip: Put plenty of napkins within easy reach of your guests and consider placing a small bowl or basket of damp towels on the table for cleaning sticky fingers.

Tip Napkins and bibs might be needed - eating crayfish can be a messy affair.

What to serve with your crayfish

Crayfish may be the star of the show, but a Swedish crayfish party is rarely just about the crayfish. The table is usually filled with simple dishes and accompaniments that guests can share.

Traditional crayfish party food includes:

  • Crusty bread and salted butter
  • Västerbottensost, a savoury Swedish hard cheese
  • Västerbotten cheese pie
  • Boiled potatoes or potato salad
  • Fresh salads
  • Dill and lemon
  • Simple sauces and dips

Västerbotten cheese pie is a particularly popular addition to a Swedish crayfish party and makes a delicious accompaniment to the sweet, delicate flavour of the crayfish. Discover our recipe for Västerbotten cheese pie here.

Something to drink at your crayfish party

Drinks are also an important part of any Swedish crayfish party. Aquavit or herbal schnapps is traditionally served in small glasses alongside beer, with guests raising a toast and singing a snapsvisa before taking their drink.

If you don't drink alcohol, you can easily make the celebration alcohol-free. Herbal lemonade, sparkling water, homemade iced tea or a non-alcoholic schnapps alternative can all be served in small glasses so everyone can join in the toast.

Our tip: Towels on the table

As crayfish are traditionally eaten with your hands, things can quickly become a little messy. Make your guests feel extra welcome by placing a basket of refreshing damp towels on the table.

Lightly moisten small cloth or cotton towels and wrap a slice of lemon in each one. Arrange them in a basket so guests can help themselves during or after the meal.

To use them, rub the lemon gently over your hands before wiping them clean with the damp towel. The lemon helps freshen your hands after eating crayfish, while the warm, practical gesture adds a thoughtful finishing touch to the meal.

Host a Swedish crayfish party and place a small basket on the table filled with wet hand towels for your guests to wash their hands.

Put out a small woven basket filled with damp washcloths so your guests can freshen up during the party.

Kräftskiva: A Swedish tradition

A Swedish crayfish party is much more than a meal. It is a celebration of late summer, friendship and spending time together. The combination of crayfish, colourful decorations, communal singing and candlelit evenings creates a uniquely Swedish atmosphere.

And you don't have to be in Sweden to enjoy it. Whether you're hosting a large garden party or a smaller dinner at home, you can recreate the spirit of a traditional kräftskiva with a beautifully set table, plenty of good food and a few playful details.

Serve crayfish alongside bread, cheese and a traditional Västerbotten cheese pie, decorate the table with paper lanterns and flowers, and don't forget the paper hats. Most importantly, gather your favourite people around the table, raise a glass and sing together.

That's the real spirit of a Swedish crayfish party – good food, good company and one last celebration of summer.
